Home-made Veggie Burgers

Here is a Recipe for home-made veggie burgers. (These will freeze well)

Ingredients:
~2 medium potatoes-unpeeled
~2 Tbsp butter
~1 small onion chopped
~1/2 cup chopped broccoli
~1/2 cup of grated carrot
~1 cup chopped mushrooms
~1 tsp soy sauce
~3/4 cup Swiss cheese
~salt and pepper
~bowl of flour (used to dip burgers into)
~2 beaten eggs
~1 and 1/3 cup of bread crumbs

1) Boil potatoes, then peel and grate
2) Saute butter, onion, broccoli, carrot and mushrooms on med. heat (about 5min.)
3) Add to Saute pan the potatoes, soy sauce, cheese and salt and pepper.
4) Form into burgers, coat in flour, dip in eggs and then in bread crumbs...repeat and fry on med. heat until done.
