Organic Carrot Cake Recipe~

Today, I made a carrot cake using organic flour and organic carrots! Not like carrot cake is a health food or anything, however, I feel better when I use fresh organic ingredients where ever I can.





Start with fresh organic carrots!








The hardest part is grating the carrots, after that my mixer did the hard work!

Carrot Cake Recipe


1.5 cups sugar
1 cup canola oil
3 fresh farm eggs
1 cup whole wheat white (organic) flour
1 cup unbleached white (organic) flour
1.5 tsp cinnamon
1/4 tsp nutmeg or pumpkin pie spice
1 tsp baking soda
1 tsp vanilla
1/2 tsp sea salt
5-6 carrots shredded (organic if you can get them)
Nuts are optional (1 cup)

Heat oven to 350 degrees and bake 35-45 min. until toothpick inserted in center comes out clean.

Frost with cream cheese frosting, and enjoy!

I actually was too full from eating my dinner, and still have not had a piece of cake!

My little helper~

Today was a cold and rainy day in our little town. Great weather for baking, so my little helper and I did just that!




I got a lot accomplished today around our home, as well. It feels so nice to have things neat and tidy again. Because of my chest cold, I did very little yesterday, and the house did not look so great. With six people living here, one day of not cleaning, and it looks unkept. I just got done fixing dinner for everyone. I had some fresh lemons, so I made the children some home-made lemonade to go with our meal. It is so easy to make, and so much better for them when it is fresh squeezed. I am thinking of slipping on my favorite flannel PJ's and snuggling under my covers with a good book. Tristyn's tennis practice was canceled, due to the rain. The girls have picture day tomorrow at their school, so tonight is bath night for the two of them. Steven is cleaning up the dinner mess, which is a blessing to me. Here is the photo of my little helper today~

Happy Friday

The sun is out, and as of now, everyone in our little family is healthy!!! This morning, little Lauren read a little prayer in church. She did such a nice job, and did not even act scared. Steven was even able to come and watch her! I have been doing some spring cleaning, mostly in the children's rooms so far. The top of Tristyn's upper shelf needed a good dusting. I took all his little collectible Bionicales down and cleaned it off! I got the house vacuumed, but still have laundry to do. I am washing all bedding again, in hopes to get rid of any germs that may still be around. I also am disinfecting with Lysol wipes.

Pizza Pockets

This morning Justin and I prepared dinner early. (Just in case I get the stomach flu, and can't cook later.) As of now, I am the only one in my family of six to not have the illness yet. Here's hoping it stays that way. I did deviate from our weekly menu, as I do from time to time. :) I used the pizza dough recipe I always use for the crust. Then separate it into two pieces, and roll it out. 1.) Top it with melted butter and your favorite seasonings. I use a Italian blend and Parmesan cheese. 2.) Add your pizza sauce. I made my own, but you can buy it as well. 3.) add your filling. In my first one, I used organic tomatoes and red onion.
4.) Add your cheese. I use Mozzarella and cheddar, you can use your favorite combo. Last, you fold it in half, and pinch the edges closed, there is your pizza pocket. In my case today, I sprayed the pans they sat on with a little spray oil, and the tops I brushed with a little olive oil, covered and put in the fridge for tonight's dinner. I am making salad and home made lemonade to drink.

Bake on 400 degrees and check every five minutes, to ensure you don't have a bubble forming. If you do, poke it with a fork and continue to bake. It is a good idea to cut a little slit in the middle before you bake, this helps to keep the bubbles from forming in the first place.
