Amish Honey Oatmeal Bread Recipe


This is a recipe from an Amish cook book that I am making for the first time today. I have mixed up a loaf, and it is now rising on my stove top. It sounds as if it will be quite good, I will let you know how it turns out. It does seem to be quite a sticky dough, but I'm sure with the honey in the recipe it can't be helped. :)

(This recipe is for one loaf of Honey Oatmeal Bread)

Boil 2/3 cup and about 3 Tablespoon of water . Next, add it to 2/3 cup of quick cook oatmeal and Set aside and cool to lukewarm.


Now, in a small bowl combine 1/3 cup of lukewarm water with 2 tsp of yeast. Let rest.

In large bowl, or in my case the Kitchen aide bowl beat the following ingredients.
1/3 cup of honey
1/4 cup of oil
1 egg
and 1/2 Tablespoon of salt

Beat well, remove attachment, and add the dough hook, or blend with a large wooden spoon if you are not using a Kitchen aide.

Now add your oatmeal, and yeast mixtures, the add 2 cups of unbleached white flour and 1/3 cup of whole wheat flour. Mix well with dough hook for about 4 minutes. Now, using a rubber spatula put this very sticky dough into a bread pan that has been sprayed with oil, cover and let rise. Then bake on 350 degress for 25-30 minutes.
